Grandma’s Lime Green Jello Salad Recipe

Ingredients
  

  • 1 cup crushed pineapple drained, reserve juice
  • 1 cup water
  • 2 packages lime Jello 3 oz each
  • 1 cup mayonnaise
  • 1 cup evaporated milk
  • 1 cup small curd cottage cheese
  • 1/2 cup chopped walnuts

Instructions
 

  • In a large measuring cup, combine the reserved pineapple juice with enough water to make 2 cups. Pour into a pot and bring to a gentle boil.
  • Add the lime Jello mixes to the boiling pineapple juice and water, stirring until dissolved. Remove from heat and let it cool slightly.
  • In a mixing bowl, blend the mayo and evaporated milk until smooth. Slowly mix in the Jello mixture until well combined with the mayo and milk. Add the crushed pineapple, cottage cheese, and walnuts, stirring to combine.
  • Pour the mixture into an 8x8" glass casserole dish. Cover and refrigerate for at least 4 hours, or preferably overnight.
