  • 1 lb ground chicken
  • 1/3 cup almond flour or 1/4 cup finely chopped walnuts or pecans
  • 1/4 cup fresh parsley chopped
  • 2 tsp fresh dill chopped
  • 3 cloves garlic minced
  • 1/4 cup feta cheese crumbled
  • 1/2 tbsp onion powder or finely chopped scallion or red onion
  • 2 tsp dried oregano or fresh oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1/3 cup crumbled feta cheese
  • Fresh parsley chopped, for garnish
  • Salt to taste

Instructions
 

  • In a large bowl, combine the ground chicken, parsley, dill, minced garlic, feta cheese, oregano, cumin, salt, and pepper. Mix well until all ingredients are evenly incorporated. Shape the mixture into meatballs about 1 1/2 to 2 inches in diameter. Lightly salt the meatballs to enhance their flavor.
  • Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs and brown them for about 3-4 minutes on each side. Cover the skillet and continue to cook for an additional 5-6 minutes until the meatballs are fully cooked. Be careful not to overcook them, as this can lead to dryness. Once cooked, set the meatballs aside.
  • In the same skillet, bring 2 cups of chicken broth to a boil. Add 1 cup of orzo pasta and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the broth.
  • Once the orzo is cooked, stir in the juice of one lemon and another tablespoon of extra virgin olive oil to enhance the flavors. Mix well to combine.
  • To serve, place a generous portion of lemon orzo on each plate, topped with the chicken meatballs. Sprinkle with crumbled feta cheese and fresh parsley for a pop of color and flavor.

Notes

For added flavor, consider grilling the meatballs for a smoky touch. You can also customize the meatballs by adding your favorite herbs or spices.
