Ingredients
  

Main Ingredients

  • 1 pound ground lamb
  • 0.25 cup minced onion
  • 3 cloves garlic, minced
  • 1 large egg
  • 0.5 cup feta cheese, crumbled
  • 1 teaspoon Greek seasoning
  • 0.5 teaspoon salt

Tzatziki Ingredients

  • 2 cloves garlic, minced or pressed
  • 0.25 teaspoon salt
  • 0.5 one European cucumber, peeled, grated, drained
  • 1 cup plain yogurt, drained
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil

Rice Ingredients

  • 2 cups cooked rice
  • 0.5 one lemon, juiced
  • 0.25 teaspoon salt

Salad Ingredients

  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with foil or parchment paper.
  • In a bowl, mix all meatball ingredients until well combined. Shape into meatballs and arrange them on the prepared baking sheet. Bake for 10-14 minutes until cooked through.
  • For the tzatziki, combine all ingredients in a bowl, adjusting salt to taste.
  • In a separate bowl, make the lemon rice by mixing cooked rice with lemon juice and salt.
  • For the cucumber & tomato salad, toss diced tomatoes, cucumbers, olive oil, and salt together.
  • To assemble the bowls, divide the lemon rice into serving bowls. Top with meatballs, tzatziki, and the cucumber & tomato salad.
  • Serve promptly for the best taste and texture. Enjoy!
