  • 3 pounds Yukon Gold potatoes, scrubbed and cut into wedges
  • 0.5 cup extra virgin olive oil
  • 4 cloves garlic, thinly sliced or minced
  • 1 tablespoon dried Greek oregano
  • 1 teaspoon sea salt
  • 0.5 cup chicken stock (or vegetable stock)
  • 3 lemons juiced
  • 1 handful fresh oregano leaves

Instructions
 

  • Preheat your oven to 400°F (200°C). This step is crucial to ensure even cooking and crispiness.
  • In a large baking dish, arrange the potato wedges so they don’t overlap too much. Drizzle the olive oil over the potatoes, ensuring each piece is coated.
  • Add the sliced or minced garlic, dried oregano, sea salt, and a generous amount of freshly ground pepper. Toss everything together well until the potatoes are fully coated with the oil and seasonings.
  • Place the baking dish in the preheated oven and bake for 15 minutes. This initial baking will start the cooking process, allowing the potatoes to soften.
  • After 15 minutes, carefully add the chicken or vegetable stock to the dish and return it to the oven. Bake for an additional 15 minutes.
  • Squeeze the juice of the three lemons over the potatoes and bake for another 35 minutes, or until the potatoes are tender and have nice golden brown edges.
  • Serve immediately on a platter, drizzling the lemon-garlic olive sauce over the potatoes and garnishing with fresh oregano leaves.

Notes

For an extra kick, try adding a pinch of red pepper flakes to the seasoning mix. These potatoes pair wonderfully with grilled meats or as a hearty side for any meal.
