  • 2 cup cooked broccoli lightly steamed
  • 2 pound boneless skinless chicken breasts
  • 2 teaspoon seasoned salt
  • 8 ounce cream cheese
  • 4 ounce green chiles
  • 1 cup Monterey Jack cheese grated
  • 0.5 teaspoon cumin
  • 1 teaspoon Ranch seasoning

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Grease a 13x9 inch casserole dish with non-stick cooking spray to prevent sticking.
  • Soften the cream cheese in the microwave until smooth, which should take about 30 seconds to 1 minute.
  • In a medium bowl, combine the green chiles, softened cream cheese, cumin, and Ranch seasoning. Mix well until fully incorporated.
  • Spread the steamed broccoli evenly on the bottom of the greased casserole dish.
  • Arrange the chicken breasts in a single layer over the broccoli. This ensures even cooking.
  • Sprinkle the seasoned salt over the chicken breasts for added flavor.
  • Pour the green chili mixture over the chicken, making sure to cover it evenly.
  • Top with the grated Monterey Jack cheese for a delicious cheesy finish.
  • Bake for 25-35 minutes or until the chicken reaches an internal temperature of 160°F (71°C). Use an instant-read thermometer to check for doneness.
  • Remove from the oven and let it rest for 10 minutes. This allows the chicken to reach a safe temperature of 165°F (74°C) without overcooking.

Notes

For added flavor, consider adding cooked bacon or diced bell peppers to the casserole before baking.
