  • 1.5 pounds boneless, skinless chicken thighs approximately 6 medium thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt more or less to taste
  • 0.5 teaspoon freshly ground black pepper more or less to taste
  • 1.5 tablespoons achiote paste
  • 0.25 cup apple cider vinegar
  • 0.25 cup orange juice
  • 2 tablespoons fresh lime juice approximately 1 large lime
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon cumin

Instructions
 

  • In a small bowl, combine the olive oil, salt, black pepper, achiote paste, apple cider vinegar, orange juice, lime juice, minced garlic, oregano, thyme, and cumin. Whisk together until fully combined.
  • Place the chicken thighs in a large food-safe zip-top bag. Pour the marinade over the chicken, seal the bag while removing as much air as possible, and gently massage the chicken through the bag for about 1 minute to ensure all pieces are coated. Refrigerate and let marinate for at least 3 hours, or up to 24 hours for maximum flavor.
  • When ready to cook, preheat your grill to medium-high heat, around 375°F to 450°F (190°C to 232°C).
  • Remove the chicken from the marinade and place it directly on the grill grates using tongs.
  • Grill the chicken thighs with the lid open for 7 to 8 minutes. Flip the chicken with tongs and cook for another 7 to 8 minutes, or until the chicken is golden brown and the internal temperature reaches 160°F (71°C) as measured with a meat thermometer.
  • Once cooked, remove the chicken thighs from the grill and transfer them to a large plate. Allow the chicken to rest for 5 to 10 minutes before slicing or chopping. Serve warm and enjoy!

Notes

For added flavor, consider serving the chicken with fresh salsa or a side of grilled vegetables. If you prefer a spicier kick, add a pinch of cayenne pepper to the marinade. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
