  • 2 large chicken breasts (boneless and skinless)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 4 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (thinly sliced)
  • 0.5 cup Kalamata olives (pitted)
  • 0.5 cup Greek salad dressing
  • 2 cups Tzatziki
  • 0.5 cup feta cheese (crumbled)

Instructions
 

  • Heat the olive oil in a grill pan or skillet over medium-high heat. Season the chicken breasts with dried oregano, salt, and pepper. Grill the chicken for about 5-7 minutes on each side until fully cooked, reaching an internal temperature of 165°F (74°C). Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  • In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, cucumber slices, and pitted Kalamata olives. Drizzle the Greek salad dressing over the top and toss gently to coat all the ingredients evenly.
  • Place the grilled chicken strips over the tossed salad. Spoon dollops of the chilled tzatziki over the salad and chicken. Finally, sprinkle crumbled feta cheese on top for added flavor.

Notes

For a bit of extra flavor, consider adding some chopped fresh dill or parsley to the salad. You can also add other vegetables like bell peppers or radishes for more crunch and color.
