Ingredients
  

  • 1 ½ pounds thin-sliced boneless skinless chicken breasts about 4 breasts
  • 12 ounces salsa verde Trader Joe’s brand recommended
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt or to taste
  • 1 teaspoon freshly ground black pepper
  • 4 slices pepper Jack cheese
  • Fresh cilantro finely minced (optional for garnish)
  • Lime wedges optional for serving

Instructions
 

  • In a large zip-top plastic bag, combine all ingredients except the cheese and cilantro. Seal the bag and massage to coat the chicken evenly. Marinate in the fridge for at least 30 minutes or overnight.
  • Lightly oil the grill grates and preheat the grill to medium-high heat.
  • Place the marinated chicken on the grill. Grill for about 5 minutes on the first side with the lid closed. Flip the chicken and grill for about 4 minutes on the second side with the lid closed, or until the chicken is fully cooked.
  • Reduce the heat to medium-low. Top each chicken breast with a slice of pepper Jack cheese. Close the lid and cook for about 1 minute, or until the cheese melts.
  • Optionally garnish with minced cilantro and serve with lime wedges. Adjust seasoning with salt, pepper, or salsa according to taste.
