  • 2 tablespoons canola oil
  • 1 pound Yukon gold potatoes, peeled and diced
  • 1 pound 93% lean ground beef
  • 1 small yellow onion, diced
  • 1 unit red bell pepper, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 to 2 teaspoons hot sauce sriracha recommended
  • 2 unit green onions, sliced
  • non-fat plain Greek yogurt or sour cream, shredded cheddar cheese, cooked brown rice or cauliflower rice for serving

Instructions
 

  • Heat canola oil in a large skillet over high heat. Once hot, reduce to medium and add diced potatoes. Cook until golden and tender but firm, about 6 minutes. Tip: Stir occasionally to ensure even cooking.
  • Add ground beef, onion, and bell pepper to the skillet. Cook, breaking apart the meat as it cooks, until it's browned and the vegetables are tender, about 6-8 minutes.
  • Stir in Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce to taste. Tip: Adjust the hot sauce according to your spice preference.
  • Continue cooking until everything is well combined and the meat is fully cooked, about 2-3 minutes.
  • Mix in sliced green onions. Adjust salt and pepper to your liking.
  • Serve hot, topped with Greek yogurt or sour cream, shredded cheddar cheese, and over rice, or enjoy it on its own with extra hot sauce. Tip: This dish is also delicious with avocado or salsa as toppings.

Notes

For a milder version, reduce the amount of hot sauce. You can also customize with your favorite toppings like avocado or salsa. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
