  • 1 medium onion, chopped
  • 3 sticks celery, chopped
  • 4 cloves garlic, minced
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 can tomato paste (6 ounces)
  • 4 cups beef broth plus more if needed
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Italian seasoning
  • 4 medium carrots, peeled and sliced
  • 1 cup frozen peas (optional)
  • Salt and pepper to taste

Instructions
 

  • In a large soup pot, heat the olive oil over medium-high heat. Add the chopped onion and celery, sautéing for 5-7 minutes until softened. Tip: Stir occasionally to prevent sticking.
  • Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  • Add the ground beef to the pot, breaking it up with a spoon. Cook for about 8 minutes, or until the beef is browned. Tip: Ensure the beef is fully cooked for the best flavor.
  • Sprinkle the flour over the beef mixture and cook for 1-2 minutes, stirring often to combine. Tip: This helps to thicken the stew.
  • Mix in the tomato paste until well incorporated.
  • Pour in the beef broth, Worcestershire sauce, and Italian seasoning. Add the diced potatoes and sliced carrots. Increase the heat to high and bring the mixture to a boil.
  • Once boiling, reduce the heat to a rapid simmer. Cover the pot with the lid slightly ajar and cook for at least 30 minutes, stirring occasionally, until the potatoes and carrots are tender. Tip: If the stew becomes too thick, add more broth.
  • Stir in the frozen peas (if using) and season with salt and pepper to taste. Note: For added flavor, consider adding a bay leaf during cooking and removing it before serving.
