  • 1 pound ground beef
  • 0.5 cup diced yellow onion
  • 1 teaspoon minced garlic (about 1-2 cloves)
  • 3 tablespoons salted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups beef broth
  • 1 cup sour cream
  • 10.5 ounces cream of mushroom soup
  • salt and pepper to taste
  • cooked egg noodles for serving, optional

Instructions
 

  • In a large skillet over medium-high heat, brown the ground beef with the diced onion and minced garlic. Cook until the beef is thoroughly cooked and crumbled, about 5-7 minutes.
  • Drain the excess grease from the skillet and return it to the stove over medium heat. Add the salted butter and let it melt completely.
  • Once the butter is melted, whisk in the all-purpose flour until it forms a roux, absorbing the butter. Tip: Stir continuously to prevent burning.
  • Gradually add the beef broth to the roux, whisking vigorously to remove any lumps. Increase the heat to high and bring the mixture to a boil for 2-3 minutes, or until it thickens slightly.
  • Lower the heat to medium and stir in the sour cream and cream of mushroom soup until well combined.
  • Season with salt and pepper to taste. Keep tasting and adjusting the seasoning as needed. If the mixture becomes too thick, add a little more beef broth to reach your desired consistency.
  • Add the cooked ground beef back into the skillet and stir until heated through.
  • Serve the beef stroganoff over cooked egg noodles, if desired, and enjoy!

Notes

For a lighter version, you can use low-fat sour cream. Feel free to add mushrooms or peas for extra flavor and nutrition.
