  • 0.75 cup cornmeal, gluten-free certified
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 unit egg
  • 4 tablespoons melted butter, cooled
  • 0.33 cup milk
  • 14.75 ounces cream-style corn check for gluten-free label
  • 1 pound lean ground beef
  • 10 ounces enchilada sauce La Victoria brand for gluten-free
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1.5 cups shredded colby jack cheese
  • Optional toppings: additional salsa, cilantro, sour cream, and sliced avocado

Instructions
 

  • Preheat your oven to 400°F (200°C). Grease a cast iron skillet or spray a pie plate, 11x7 pan, or 9x9 pan with cooking spray.
  • In a large bowl, whisk together the cornmeal, sugar, baking powder, and salt. Add the egg, melted butter, milk, and cream-style corn. Mix until well combined.
  • Pour the cornbread mixture into the prepared baking dish. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean and the edges are golden brown. Once done, remove from the oven and reduce the temperature to 375°F (190°C).
  • Using the handle of a wooden spoon, poke holes all over the surface of the cornbread. Pour half of the enchilada sauce on top and spread it evenly.
  • While the cornbread is baking, prepare the beef filling. In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat if necessary. Stir in the remaining enchilada sauce, salsa, and chili powder. Bring to a boil, then reduce heat and simmer uncovered for 5 minutes until thickened.
  • Spread the beef filling over the warm cornbread. Top with shredded cheese and return to the oven at 375°F (190°C) for 15 minutes, or until the cheese is bubbly and melted.
  • Let the pie sit for 5-10 minutes before cutting. Serve with optional toppings like additional salsa, cilantro, sour cream, and sliced avocado.

Notes

For a spicier kick, consider adding diced jalapeños to the beef filling. You can substitute the colby jack cheese with your favorite cheese blend for a different flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
