  • 3 tablespoons extra virgin olive oil
  • 1 cup chopped yellow onion
  • 1 each bell pepper (red or yellow preferred), chopped
  • 2 cloves garlic minced
  • 1 pound ground turkey (thighs preferred)
  • 1 teaspoon chipotle powder or chili powder (or to taste)
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions
 

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped onions and bell pepper. Cook until softened, about 3-5 minutes. Tip: Stir occasionally to ensure even cooking.
  • Add the minced garlic and cook for an additional 30 seconds until fragrant.
  • Push the vegetables to one side of the pan. Add more oil to the empty side. Place crumpled ground turkey in the pan, sprinkle with salt and chipotle or chili powder. Tip: Don’t stir the turkey right away; let it brown for better flavor.
  • Brown the turkey without stirring until one side is browned, then flip to brown the other side. Tip: This should take about 5-7 minutes.
  • Once the turkey is cooked through, mix in the onions and peppers. Season with more salt and chili powder to taste. Remove from heat.
  • Stir in fresh chopped parsley or cilantro for a burst of freshness.
  • Serve alone or with steamed rice or noodles for a complete meal.

Notes

For added flavor, consider topping with a dollop of sour cream or a sprinkle of cheese.
