  • 6 medium sweet potatoes about 8 ounces each, scrubbed clean
  • 1 teaspoon avocado oil
  • 1 medium poblano pepper seeded and diced
  • 1 medium jalapeño pepper seeded and diced
  • 1 2 yellow onion diced
  • 1 pound 93% lean ground turkey
  • 3 cloves garlic chopped
  • 1 teaspoon kosher salt
  • 1.5 teaspoons cumin
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup frozen roasted corn
  • 1 tablespoon cilantro chopped, plus more for garnish
  • 0.75 cup shredded pepper jack cheese
  • 1 serving Greek yogurt for serving

Instructions
 

  • Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  • Place the sweet potatoes on the prepared baking sheet and pierce each potato a few times with a fork.
  • Roast the sweet potatoes for 45-60 minutes until very tender. Remove from the oven and let them cool slightly.
  • In a large nonstick skillet over medium heat, heat the avocado oil.
  • Add the poblano, jalapeño, and onion. Cook, stirring occasionally, until the vegetables soften slightly, about 5-7 minutes.
  • Add the ground turkey and garlic to the skillet. Break the turkey into small pieces with a wooden spoon.
  • Season with salt and cumin. Cook, stirring occasionally, until the turkey is cooked through, about 7 minutes.
  • Stir in the black beans and corn, heating through. Remove from heat and add the cilantro, stirring to combine.
  • Cut the slightly cooled sweet potatoes lengthwise and open them up to create space for the filling.
  • Use a measuring cup to stuff them, compacting the filling slightly.
  • Top with cheese and broil until melted and bubbly, for about 2-3 minutes.
  • Serve topped with Greek yogurt and chopped cilantro.

Notes

For a vegetarian option, substitute the ground turkey with plant-based protein like lentils or chickpeas.
