Ingredients

  • 1 tbsp avocado oil or olive oil
  • 1 yellow onion dice
  • 1 lb ground turkey
  • 1 red bell pepper choppe
  • 4 cloves garlic minced
  • 3 tbsp chili powder
  • 2 cups chicken broth
  • 1 cup salsa
  • cup white rice
  • 1 15-oz can black beans, drained
  • 1 7-oz can green chilis
  • 1 tsp sea salt to taste
  • 3 cups grated colby jack cheese

For Serving:

  • 1 ripe avocado sliced
  • 3 stalks green onion chopped
  • ½ cup sour cream
  • ½ cup to 1 cup salsa

Instructions
 

  • Preheat your oven to 375°F (190°C) and spray a 13” x 9” casserole dish with cooking spray.
  • In a large skillet, heat the avocado oil over medium-high heat. Add the diced onion and sauté for about 3 to 5 minutes until softened.
  • Add the ground turkey to the skillet, breaking it into bite-sized pieces with a spatula. Cook until most of the pink is gone, seasoning lightly with sea salt.
  • In the prepared baking dish, combine the chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, drained black beans, green chilis, and sea salt. Stir well to combine.
  • Mix in the cooked ground turkey and onion mixture, then sprinkle the grated cheese evenly on top.
  • Cover the casserole dish with aluminum foil and bake for 45 minutes. Tip: This helps steam the rice so it cooks perfectly.
  • After 45 minutes, remove the foil and switch your oven to the High Broil setting. Broil the casserole for 5 to 8 minutes, or until the cheese is bubbly and slightly golden brown. The casserole may look a bit liquidy at first, but this will absorb into the rice as it sits.
  • Serve the casserole warm, topped with your choice of sliced avocado, chopped green onion, sour cream, and additional salsa. Enjoy your meal!

Notes

Feel free to customize your toppings with items like guacamole, black olives, corn chips, shredded lettuce, or pico de gallo for extra flavor. This casserole can be made ahead of time and stored in the refrigerator for easy reheating.
