  • 1 pound ground turkey
  • 4 medium potatoes, diced small
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 0.5 cup shredded cheese (optional)
  • Fresh parsley (optional)

Instructions
 

  • Prep the Potatoes: Start by washing and dicing your potatoes into small cubes. This helps them cook faster. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with a little salt and pepper, and cook until they are golden on the outside and soft in the middle, about 10-12 minutes. Stir occasionally to ensure even cooking.
  • Cook the turkey: In the same skillet, add the remaining tablespoon of olive oil and heat on medium. Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes.
  • Add Onion and Garlic: Stir in the chopped onion and minced garlic. Cook until the onion is soft and fragrant, about 3-4 minutes.
  • Season It Up: Sprinkle in the paprika, onion powder, garlic powder, salt, and black pepper. Mix everything well to combine the flavors.
  • Combine with Potatoes: Add the cooked potatoes back into the skillet with the turkey mixture. Pour in a splash of water (about 2 tablespoons) and cover the skillet. Let it cook for about 15 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
  • Finish and Serve: If desired, top with shredded cheese and let it melt for a minute. Garnish with fresh parsley before serving for a pop of color and flavor.
