Main Ingredients

  • 1.5 cups chopped beef
  • 1 small white onion, chopped
  • 1 large red bell pepper, seeded and chopped
  • 1 tablespoon vegetable oil
  • 3 large eggs, lightly beaten
  • 3 cups cooked rice
  • 1 cup pineapple tidbits
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce adjust to taste
  • 2 tablespoons chopped green onions optional

Instructions
 

  • Heat a large skillet or wok over medium heat. Add vegetable oil.
  • Put in the chopped beef, white onion, and red bell pepper. Cook until tender.
  • Push to one side, scramble the eggs on the empty side, then mix.
  • Add the rice and pineapple. Drizzle soy sauce and sesame oil, stir well.
  • Cook until everything is heated through, then toss in green onions.

Notes

For a twist, try adding cooked shrimp or chicken instead of beef for a different flavor profile.
