  • 1 cup cottage cheese
  • 2 tbsp olive oil
  • 0.5 lb mushrooms, sliced
  • pinch salt
  • pinch pepper
  • 1 lb ground beef
  • 0.5 cup diced onion about a medium-sized onion
  • 3 cloves garlic, grated
  • 1 tsp fresh thyme leaves
  • 3 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 5 cups beef broth
  • 12 oz egg noodles or favorite pasta noodles
  • Fresh parsley, chopped, to serve

Instructions
 

  • Blend the cottage cheese until smooth.
  • Heat a medium pot over medium heat and add the olive oil.
  • Once heated, add mushrooms, season with salt and pepper, and sauté until mostly tender.
  • Stir in the ground beef and onion. Cook until the beef is browned and onion is tender.
  • Add garlic and thyme, sauté for another minute.
  • Sprinkle flour over the beef mixture and stir, cooking the flour for about 2 minutes.
  • Pour in Worcestershire sauce and beef broth. Bring to a low boil.
  • Add egg noodles, cover, and cook until noodles are cooked through, stirring every 3 minutes.
  • Stir in blended cottage cheese until smooth and creamy.
  • Serve hot with parsley and extra ground black pepper.

Notes

Feel free to customize this soup by adding your favorite vegetables like peas or carrots.
