Ingredients

  • 2 cup dry brown or green lentils
  • 6 cup water
  • 1 tablespoon olive oil
  • 2 medium yellow onions, minced
  • 1 medium red bell pepper, minced
  • 5 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 15-ounce can tomato sauce not pasta sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard or yellow mustard, to taste
  • 0.5 cup ketchup plus more to taste
  • 1 to taste salt and pepper
  • 1 for serving hamburger buns

Instructions
 

  • Rinse the lentils in a fine-mesh strainer under cold water to remove any dust and dirt.
  • Transfer the lentils to a medium-sized pot and add 6 cups of water. Bring to a boil over high heat.
  • Reduce heat to low and cover the pot. Cook for about 20 minutes, until the lentils are al dente.
  • Drain the lentils in a fine-mesh strainer and set aside.
  • In a large skillet, heat olive oil over medium heat. Add onions and red bell pepper, cook for 6-8 minutes until soft.
  • Add minced garlic and Italian seasoning, cook for an additional 30 seconds.
  • Stir in tomato sauce, Worcestershire sauce, soy sauce, Dijon mustard, and ketchup. Mix well.
  • Add cooked lentils to the sauce, reduce heat to low, and cook for another 5 minutes.
  • Season with salt and pepper to taste, and serve on toasted hamburger buns.

Notes

For a spicier kick, consider adding a dash of hot sauce or red pepper flakes.
