  • 1 lb ground turkey
  • 1 cup bell pepper, chopped
  • 0.5 cup onion, finely diced
  • 1 large carrot, shredded
  • 1 small zucchini, shredded
  • 1.5 teaspoons salt
  • 0.25 teaspoon pepper
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 14 oz can crushed tomatoes
  • 3 cups low sodium chicken broth
  • 250 grams dry lasagna noodles about 8.75oz, 9 regular noodles
  • 1 cup shredded mozzarella cheese

Instructions
 

  • In a large skillet, cook the ground turkey over medium heat for 2-3 minutes until it starts to brown.
  • Add the bell pepper and onion, and cook for about 5 minutes until the turkey is browned and the veggies are almost tender. Add the carrot, zucchini, salt, pepper, garlic, Italian seasoning, oregano, and red pepper flakes. Stir and cook for 1 minute.
  • Pour in the crushed tomatoes, chicken broth, and broken lasagna noodles. Stir well and bring to a simmer over medium-high heat.
  • Reduce the heat to medium, cover the skillet, and cook, stirring occasionally, until the lasagna noodles are just tender, about 15 minutes or to your desired tenderness.
  • Sprinkle the shredded mozzarella cheese over the soup, cover, and let it sit for 5 minutes. Serve hot.

Notes

For a vegetarian option, substitute the ground turkey with plant-based crumbles or extra veggies like mushrooms and spinach.
