Main Ingredients
2.5
lbs
bone-in, skin-on chicken (thighs, drumsticks, or leg quarters)
0.25
cup
avocado or olive oil
Sea salt & ground black pepper, to taste
3
medium shallots, thinly sliced
20
to 25 garlic cloves, whole
1
small bunch of fresh thyme
3
to 4 sprigs of fresh rosemary
0.5
cup
chicken broth
Instructions
Preheat your oven to 400°F (204°C).
Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil for easy cleanup.
Thinly slice the shallots and spread them on the bottom of the casserole dish. Add half of the garlic cloves, thyme, and rosemary.
Place the chicken on top of the shallots and garlic. Drizzle with oil and season with salt and pepper.
Add more thyme and the remaining garlic cloves around the chicken.
Pour chicken broth along the edges of the pan.
Roast the chicken uncovered at 400°F (204°C) for about 1 hour until the skin is golden and crispy.
Optional: Broil for the last 5-7 minutes for extra crispy skin.
Remove from the oven and pour the pan sauce over the chicken.
Serve with side dishes like mashed potatoes, roasted potatoes, pasta, or rice.
Notes
For a richer flavor, you can add a splash of heavy cream to the pan sauce before serving.
