Ingredients
  

Main Ingredients

  • 2.5 lbs bone-in, skin-on chicken (thighs, drumsticks, or leg quarters)
  • 0.25 cup avocado or olive oil
  • Sea salt & ground black pepper, to taste
  • 3 medium shallots, thinly sliced
  • 20 to 25 garlic cloves, whole
  • 1 small bunch of fresh thyme
  • 3 to 4 sprigs of fresh rosemary
  • 0.5 cup chicken broth

Instructions
 

  • Preheat your oven to 400°F (204°C).
  • Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil for easy cleanup.
  • Thinly slice the shallots and spread them on the bottom of the casserole dish. Add half of the garlic cloves, thyme, and rosemary.
  • Place the chicken on top of the shallots and garlic. Drizzle with oil and season with salt and pepper.
  • Add more thyme and the remaining garlic cloves around the chicken.
  • Pour chicken broth along the edges of the pan.
  • Roast the chicken uncovered at 400°F (204°C) for about 1 hour until the skin is golden and crispy.
  • Optional: Broil for the last 5-7 minutes for extra crispy skin.
  • Remove from the oven and pour the pan sauce over the chicken.
  • Serve with side dishes like mashed potatoes, roasted potatoes, pasta, or rice.

Notes

For a richer flavor, you can add a splash of heavy cream to the pan sauce before serving.
