  • 1 pound ground turkey
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 4 pieces green onions, minced
  • 2 cloves garlic, pressed
  • 1.5 tablespoons grated ginger or ginger paste
  • 1 tablespoon low sodium soy sauce or coconut aminos
  • 1 tablespoon red curry paste
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the ground turkey, egg, panko breadcrumbs, minced green onions, pressed garlic, grated ginger, soy sauce, red curry paste, kosher salt, and black pepper. Use your clean hands to mix everything together until well blended.
  • To form the meatballs, wet your hands slightly to prevent sticking. Take a spoonful of the mixture and roll it between your palms to create a meatball. Place the meatballs on the prepared baking sheet. Repeat until all the mixture is used.
  • Bake the meatballs in the preheated oven for 15 minutes, or until they are cooked through and golden.
  • While the meatballs are baking, heat the groundnut oil in a large pan over medium heat. Add the sliced yellow onion and red bell pepper, sautéing for 3-4 minutes until they soften.
  • Stir in the minced ginger, red curry paste, honey, and coconut milk. Mix well and bring the sauce to a boil. Once boiling, reduce the heat and let it simmer for 8-10 minutes.
  • Once the meatballs are done baking, add them to the curry sauce. Stir gently to coat the meatballs in the sauce. Season with salt and pepper to taste.
  • Serve the meatballs hot, garnished with fresh cilantro and chopped roasted peanuts.

Notes

For a spicier kick, add more red curry paste to the sauce. Serve with rice or noodles for a complete meal.
