  • 13.5 ounces beef sausage sliced into ¼-inch rounds
  • 1 cup onion diced
  • 0.5 cup celery diced
  • 0.5 cup red bell pepper seeded and diced
  • 2 teaspoons minced garlic
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes peeled and cubed
  • 0.5 cup heavy whipping cream
  • 1 cup mild cheddar cheese shredded
  • 1 tablespoon chopped parsley for garnish

Instructions
 

  • In a large pot over medium heat, add the vegetable oil. Once hot, add the sliced sausage and cook until browned, stirring occasionally, for about 3-4 minutes. Remove the sausage from the pot and set it aside. Tip: This step builds a rich flavor base, so don't rush it!
  • In the same pot over medium heat, add the diced onion, celery, and bell pepper. Cook until softened, about 5-8 minutes. Add the minced garlic and cook for an additional minute. Tip: Stir frequently to prevent the garlic from burning.
  • Add Cajun seasoning, salt, black pepper, paprika, cayenne pepper, chicken broth, and cubed potatoes to the pot. Reduce the heat and simmer for 20-25 minutes, or until the potatoes are fork-tender. Tip: Check the potatoes occasionally to avoid overcooking.
  • Return the cooked sausage to the pot and stir in the heavy cream and shredded cheese. Let the soup simmer for another 5 minutes, or until everything is heated through and the cheese is melted. Tip: Stir continuously to ensure the cheese melts evenly.
  • Garnish the soup with chopped parsley and serve it warm. Tip: For extra flavor, consider topping with a dollop of sour cream or extra shredded cheese!
