Ingredients

  • 1 cup beef stock low sodium preferred
  • 3 tbsp tomato paste
  • 2 tsp Italian herbs
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 lb pasta shells
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 0.5 onion diced
  • 0.75 cup reserved pasta water
  • 2 14.5 oz cans diced tomatoes
  • 0.5 tsp salt
  • 0.75 cup grated Parmesan cheese
  • 0.5 cup heavy cream
  • 3 cloves garlic minced
  • 2 3 cups fresh spinach

Instructions
 

  • Cook the pasta shells according to package directions until al dente, reserve some pasta water, drain and toss with olive oil.
  • In a skillet, heat olive oil, sauté onion until softened, add ground beef and cook until browned.
  • Add spinach, diced tomatoes, beef stock, tomato paste, garlic, herbs, salt, pepper, and red pepper flakes. Cook until spinach wilts, then stir in reserved pasta water, cream, and Parmesan.
  • Add cooked pasta to the skillet and toss to coat with the sauce.
  • Serve warm, topped with additional cheese and fresh herbs if desired.

Notes

For added flavor, consider sautéing some mushrooms or bell peppers with the onion. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
