- 2 pounds boneless chicken breasts
- 1 tablespoon extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh thyme leaves
- 1 tablespoon fresh chopped sage
- 2 cloves garlic, chopped
- Kosher salt and black pepper to taste
- 2 shallots, quartered
- 1 cup apple cider or chicken broth do not use vinegar
- 1 Juice of 1 lemon
- 2 tablespoons salted butter
- 2 cups dry orzo pasta
- 1.5 cups chopped broccoli
- 0.33 cup heavy cream or canned full-fat coconut milk
- 0.33 cup freshly grated Parmesan cheese
Rub the chicken with olive oil, Dijon mustard, thyme, sage, garlic, salt, and pepper in the slow cooker. Pour in the apple cider or chicken broth, add the lemon juice, and place the quartered shallots on top. Cook on low for 3-4 hours or high for 1-2 hours.
Once cooked, preheat the broiler. Carefully remove the chicken from the slow cooker and place it on a baking sheet.
Increase the slow cooker heat to high. Stir in the orzo, chopped broccoli, and 1 cup of water. Cover and let cook for 20-30 minutes until the orzo is al dente.
After the orzo is cooked, stir in the heavy cream or coconut milk and grated Parmesan cheese.
Place the salted butter on top of the chicken and broil for 1-3 minutes until the skin is crispy. Serve the chicken over the creamy orzo mixture. Enjoy your delightful meal!
