  • 2 tbsp vegetable oil
  • 2 large eggs, beaten
  • 2 tbsp salted butter
  • 0.5 cup sweet onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked and cooled long-grain white rice
  • 2 tbsp soy sauce
  • 2 green onions (green part only), thinly sliced

Instructions
 

  • Step 1: Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat.
  • Step 2: Add the beaten eggs and stir until almost cooked but still slightly wet, about 30 seconds to 1 minute. Transfer the eggs back to the bowl.
  • Step 3: In the same wok, add 2 tablespoons of salted butter and diced sweet onion. Cook until the onions are translucent, about 3-5 minutes, stirring occasionally.
  • Step 4: Add the minced garlic and cook until fragrant, about 30 seconds.
  • Step 5: Put the cooked and cooled rice into the skillet, stir well, and cook until the rice is heated through, about 3-5 minutes.
  • Step 6: Mix in the cooked eggs and soy sauce, breaking up the eggs into smaller pieces. Cook for an additional 2 minutes.
  • Step 7: Stir in the thinly sliced green onions and serve hot.

Notes

For added flavor, you can include cooked vegetables like peas, carrots, or bell peppers. Customize with your favorite protein like beef, chicken, or shrimp.
