  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, diced
  • 2 ribs celery, diced
  • 4 cloves garlic, chopped
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 1.5 cups green lentils, rinsed
  • 1.5 lb chicken breast, cut into bite-sized pieces
  • 14 oz fire-roasted diced tomatoes, with their juices
  • 6 cups chicken broth
  • 5 oz spinach
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a dutch oven or heavy-bottomed pot over medium heat. Add the diced onions, carrots, and celery. Sauté for about 6 minutes until soft.
  • Add the chopped garlic, salt, smoked paprika, and cumin. Sauté for an additional minute.
  • Add the rinsed lentils, diced chicken, diced tomatoes (including their juices), and chicken broth to the pot. Bring the soup to a boil, then reduce the heat to a simmer. Cook until the lentils are tender, approximately 25 minutes.
  • Stir in the spinach until wilted. Season with salt and pepper to taste.

For added flavor, consider garnishing with a dollop of sour cream or a sprinkle of fresh herbs like parsley or cilantro.
