  • 7 oz Conchiglie pasta
  • 0.75 cup Chicken stock
  • 1 tablespoon Olive oil
  • 1 lb Chicken breast, diced
  • 1 tablespoon Italian seasoning
  • 1.5 cup Cottage cheese
  • 1 clove Garlic, crushed
  • 2 tablespoons Tomato puree
  • 3 cups Spinach
  • 6 pieces Sun-dried tomatoes, diced
  • 0.33 cup Parmesan cheese, grated
  • 1 bunch Fresh basil for garnish

Instructions
 

  • Bring a pot of water to a boil. Add the Conchiglie pasta and simmer for about 10 minutes until al dente. Stir occasionally to prevent sticking.
  • While the pasta cooks, prepare the chicken stock by mixing 180 ml of water with the stock. Allow it to cool to prevent the sauce from splitting later.
  • In a large heavy pan, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and sprinkle with 1 tablespoon of Italian seasoning. Cook for about 5-8 minutes, stirring occasionally, until the chicken is browned on all sides. Remove from heat and let it cool slightly.
  • In a blender, combine the cooled chicken stock, cottage cheese, crushed garlic, and tomato puree. Blend until smooth and creamy. Make sure to blend thoroughly for a nice, creamy texture.
  • Once the pasta is cooked, drain it and let it cool slightly. Add the pasta to the pan with the chicken, along with the spinach.
  • Pour the blended sauce over the pasta and chicken mixture. Add the diced sun-dried tomatoes and grated Parmesan cheese. Mix everything together gently. Use a spatula to avoid breaking the pasta.
  • Heat the mixture over low heat, stirring occasionally, to warm through. Be careful not to let it boil, as this can cause the sauce to split.
  • Serve the pasta warm, garnished with fresh basil. A squeeze of lemon juice adds a nice brightness to the dish!

Notes

For added flavor, consider using fresh herbs like thyme or oregano. You can substitute the chicken with cooked beef if desired. Feel free to add other vegetables like bell peppers or zucchini for extra nutrition.
