  • 1 cup creamy peanut butter
  • 0.5 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 3 cups powdered sugar
  • 1.5 cups semi-sweet chocolate chips

Instructions
 

  • In a mixing bowl, combine 1 cup of creamy peanut butter, 1/2 cup of softened unsalted butter, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until smooth and creamy.
  • Gradually add 3 cups of powdered sugar to the mixture, stirring continuously until well combined. This step may require some elbow grease, but it will be worth it!
  • Once your mixture is ready, chill it in the freezer for about 20 minutes. This will make it easier to shape.
  • After chilling, take the mixture out and shape it into 1-inch balls. Insert a toothpick into the center of each ball for dipping later.
  • Return the peanut butter balls to the freezer and let them firm up for 45 minutes. This is a crucial step to ensure they hold their shape when dipped.
  • While the balls are chilling, melt 1 1/2 cups of semi-sweet chocolate chips in the microwave. Heat in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
  • Using the toothpick, dip each ball into the melted chocolate, making sure to coat it evenly. Allow excess chocolate to drip off.
  • Place the dipped balls on a baking sheet lined with parchment paper. You can sprinkle chopped nuts or sea salt on top for a fun twist before the chocolate sets.
  • Refrigerate the coated balls for at least 3 hours, or until the chocolate is firm. Once set, carefully remove the toothpicks.
  • Store your homemade Buckeye balls in the refrigerator and enjoy these delicious treats whenever you like!

Notes

For a fun twist, sprinkle chopped nuts or sea salt on top of the chocolate coating before it sets.
