  • 1.75 lbs ground beef
  • 9 tablespoons dark brown sugar
  • 1 tablespoon smoked paprika
  • 3 tablespoons vegetable oil
  • 1.25 tablespoons coarse salt
  • 1 teaspoon ground black pepper
  • 2 heads garlic

Instructions
 

  • Peel the garlic cloves. Crush them using a mortar and pestle, then mince. Set aside.
  • In a large mixing bowl, combine the ground beef with all ingredients, including minced garlic. Mix thoroughly for about 5 minutes.
  • Cover the bowl and refrigerate for 2 hours to let flavors meld.
  • On a flat surface with wax paper, scoop 3 tablespoons of the mixture and fold to form a sausage shape. Repeat until finished.
  • In a pan, combine 1 cup water and 4 tablespoons cooking oil. Add the longganisa and bring to a boil, then simmer until water evaporates completely (10-15 minutes).
  • Fry the longganisa in remaining oil on medium heat until browned on both sides (about 5 minutes per side).
  • Remove from the pan and serve on a plate. Enjoy your homemade longganisa with rice!

Notes

You can adjust the sweetness and spiciness of the longganisa by tweaking the amount of sugar and smoked paprika.
