  • 3.5 tbsp butter
  • 3 tbsp flour
  • 2 cup milk full fat preferred but low fat is ok
  • 2.5 cup water
  • 2.5 cup elbow macaroni uncooked
  • 0.75 cup mozzarella cheese shredded
  • 1.5 cup cheddar cheese shredded
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp mustard powder
  • salt and pepper to taste

Instructions
 

  • In a medium pot or large saucepan over medium heat, melt the butter.
  • Add the flour and cook for 1 minute, stirring constantly to avoid burning.
  • Pour in about 3/4 cup of milk and mix into the butter mixture until it becomes a smooth slurry.
  • Gradually pour in the remaining milk, then add the water and seasonings.
  • Add the uncooked macaroni and mix thoroughly, stirring occasionally until you see steam rising.
  • Cook for 9-10 minutes, stirring regularly until the sauce thickens and the macaroni is just cooked – tender but firm.
  • Remove from heat and quickly stir in the shredded mozzarella and cheddar cheese. Adjust salt and pepper to taste.
  • Serve immediately and enjoy your creamy mac and cheese!

Notes

For extra flavor, consider adding crispy bacon bits or diced tomatoes as toppings.
