Ingredients
  

  • 4 large potatoes peeled and diced
  • 3 garlic cloves minced
  • 100 g 3.5 oz thick bacon, cut into pieces
  • 2 tablespoons honey
  • 1/2 teaspoon salt or to taste
  • 1 teaspoon cracked pepper
  • Chopped parsley to garnish

Instructions
 

  • Peel and dice the potatoes, then place them in a large pot. Cover with cold water and add 1 tablespoon of salt. Boil the potatoes until tender, about 8 minutes once the water starts boiling.
  • Drain the potatoes and let them steam dry for 10 minutes. While they dry, preheat your oven to 200°C (400ºF). Lightly oil a rimmed baking sheet and heat it in the oven.
  • Spread the pre-cooked potatoes on the warm baking sheet. Drizzle with a tablespoon of olive oil, season with salt and pepper, toss gently to coat, and spread them out evenly.
  • Roast the potatoes for 30 minutes, give them a quick stir, and roast for an additional 10 to 15 minutes until crispy.
  • While the potatoes roast, brown the diced bacon in a skillet until crispy. Drain off the fat and add the honey and minced garlic.
  • Once the potatoes are done, pour the honey and bacon mixture over them and gently combine. Transfer to a serving dish, sprinkle with chopped parsley, and serve immediately. Enjoy your flavorful dish!

Notes

Notes: For a vegetarian option, you can omit the bacon and increase the amount of honey for a sweet twist.
