  • 4 pieces chicken breasts (boneless and skinless)
  • 1 medium onion, thinly sliced
  • 1 teaspoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 8 ounces fresh mozzarella cheese, sliced
  • 3 tablespoons honey
  • 3 tablespoons balsamic glaze/syrup
  • 0.25 cup chopped parsley

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix the honey and balsamic syrup. Heat in the microwave for 1 minute, then set aside.
  • Spread the thinly sliced onion in a 9x13" casserole dish sprayed with cooking spray or olive oil.
  • Place the chicken breasts on top of the onions.
  • Baste the chicken with half of the honey balsamic glaze.
  • Season the chicken with salt, black pepper, and garlic powder.
  • Top each chicken breast with 2-3 slices of fresh mozzarella cheese.
  • Bake for about 30 minutes, adjusting time based on the thickness of your chicken breasts.
  • Let it rest for 5 minutes before slicing or serving.
  • When serving, add sautéed onion slices and chopped parsley on top of each chicken breast. Drizzle the remaining honey balsamic glaze over each chicken breast.
  • Serve the chicken on its own, over steamed rice, pasta, or roasted potatoes.

Notes

Recipe notes: Adjust cooking time based on the thickness of the chicken breasts. Heating the honey and balsamic syrup helps in mixing them easily.
