Preheat your oven to 350°F (175°C). Spray a large loaf pan (6½ x 10-inch) with nonstick cooking spray and set it aside.
In a large bowl, combine the ground beef, beaten eggs, parmesan cheese, parsley, salt, and pepper. Mix gently until just combined. Tip: Avoid overmixing to keep the meatloaf tender.
In a medium bowl, mix together the milk, breadcrumbs, garlic, and onion.
Add the milk mixture to the meat mixture, combining well but being careful not to overwork the ingredients.
Transfer the meat mixture to the center of the prepared loaf pan. Shape it into a log or loaf, roughly 8–9 inches long and 4–5 inches wide. Aim for a uniform thickness for even cooking.
In a separate bowl, mix together the barbecue sauce, honey, and grape jelly until well combined.
Spread half of the barbecue mixture over the top of the meatloaf.
Bake in the preheated oven for 40 minutes.
After 40 minutes, spread the remaining barbecue sauce mixture over the meatloaf.
Bake for an additional 20 minutes, or until the internal temperature reaches 160°F (70°C).
Allow the meatloaf to cool for about 5 minutes before slicing and serving. Tip: This resting time helps retain the juices.
Notes
For added flavor, consider mixing in some chopped bell peppers or mushrooms into the meat mixture. Serve with mashed potatoes or a fresh salad for a complete meal.
