  • 3 pounds ground beef
  • 2 large eggs, beaten
  • 0.5 cup grated parmesan cheese
  • 2 tablespoons flat-leaf parsley, chopped
  • 2 teaspoons kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 cup milk
  • 0.5 cup fine dry breadcrumbs
  • 2 cloves garlic, minced
  • 0.25 cup onion, finely chopped
  • 1 cup barbecue sauce
  • 0.333 cup honey
  • 0.333 cup grape jelly

Instructions
 

  • Preheat your oven to 350°F (175°C). Spray a large loaf pan (6½ x 10-inch) with nonstick cooking spray and set it aside.
  • In a large bowl, combine the ground beef, beaten eggs, parmesan cheese, parsley, salt, and pepper. Mix gently until just combined. Tip: Avoid overmixing to keep the meatloaf tender.
  • In a medium bowl, mix together the milk, breadcrumbs, garlic, and onion.
  • Add the milk mixture to the meat mixture, combining well but being careful not to overwork the ingredients.
  • Transfer the meat mixture to the center of the prepared loaf pan. Shape it into a log or loaf, roughly 8–9 inches long and 4–5 inches wide. Aim for a uniform thickness for even cooking.
  • In a separate bowl, mix together the barbecue sauce, honey, and grape jelly until well combined.
  • Spread half of the barbecue mixture over the top of the meatloaf.
  • Bake in the preheated oven for 40 minutes.
  • After 40 minutes, spread the remaining barbecue sauce mixture over the meatloaf.
  • Bake for an additional 20 minutes, or until the internal temperature reaches 160°F (70°C).
  • Allow the meatloaf to cool for about 5 minutes before slicing and serving. Tip: This resting time helps retain the juices.

Notes

For added flavor, consider mixing in some chopped bell peppers or mushrooms into the meat mixture. Serve with mashed potatoes or a fresh salad for a complete meal.
