  • 1 lb boneless skinless chicken, cut into 1-inch cubes
  • 2 teaspoons cornstarch (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, finely minced
  • 0.25 cup honey
  • 3 tablespoons low-sodium chicken stock
  • 1 tablespoon lemon juice
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon red chili pepper flakes (for garnish)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

  • In a large salad bowl, combine the chicken cubes with cornstarch, salt, and pepper. Mix well to ensure all pieces are evenly coated.
  • Heat olive oil in a large skillet over medium-high heat. Add the butter and let it melt completely. Once melted, add the chicken cubes and cook for about 6-8 minutes, turning occasionally, until they are golden brown. If necessary, cook in batches to avoid overcrowding the pan.
  • After the chicken is cooked, add the minced garlic, honey, chicken stock, lemon juice, and hot sauce (if using) to the skillet. Stir well to coat the chicken and let the sauce simmer for a couple of minutes until it thickens and adheres to the chicken. This will enhance the flavor and give it a rich glaze.
  • Garnish the honey garlic chicken bites with chopped parsley and red chili pepper flakes. Serve over rice for a delicious meal. Enjoy!

Notes

For a sweeter flavor, you can add a bit more honey. Feel free to adjust the amount of hot sauce based on your spice preference.
