  • 2 pounds carrots, peeled
  • 0.25 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons butter or ghee, melted
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 bunch fresh herbs for garnish such as parsley or thyme

Instructions
 

  • Preheat your oven to 425°F (220°C). Cut the carrots into diagonal pieces about 1 to 1.5 inches in length. If the carrots are large, slice them in half for even cooking.
  • In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter, olive oil, cinnamon, ginger, salt, and pepper. Mix well to coat the carrots evenly.
  • Spread the carrots and glaze onto a sheet pan in a single layer for optimal roasting.
  • Roast in the oven for 20-25 minutes, tossing halfway through. For extra caramelization, broil for an additional 2-3 minutes, watching closely to prevent burning.
  • Transfer the roasted carrots to a serving dish and garnish with chopped herbs before serving.

Notes

For extra flavor, sprinkle chopped nuts like almonds or pecans over the glazed carrots before serving.
