  • 2 pounds red-skinned sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Line a large rimmed baking sheet with parchment paper and set it aside.
  • Peel the sweet potatoes and cut them into 1-inch chunks. Place the chunks in a large bowl.
  • In a small bowl, whisk together the olive oil, honey, lemon juice, and cinnamon until well combined.
  • Pour the mixture over the sweet potatoes and toss them to ensure they are completely coated.
  • Arrange the sweet potatoes on the prepared baking sheet in a single layer and sprinkle with salt.
  • Roast in the preheated oven for about 20 minutes. After 20 minutes, flip the sweet potato pieces over and roast for an additional 15-20 minutes, or until they reach your desired tenderness.
  • Let the sweet potatoes stand for 5 minutes before serving.

Notes

For added flavor, consider sprinkling some chopped nuts or fresh herbs on top before serving. These sweet potatoes pair wonderfully with grilled meats or can be enjoyed on their own as a healthy snack.
