Ingredients

  • 4 4-6 ounce salmon filets
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber sliced
  • 1 cup cooked edamame
  • 1/2 cup sriracha mayo
  • Red pepper flakes and sesame seeds for garnish

Instructions
 

  • Cut the salmon into 1-inch cubes, removing the skin if preferred.
  • In a large bowl, whisk together soy sauce, honey, sriracha, minced garlic, and water to create the marinade.
  • Add the salmon to the marinade and let it marinate for at least 20 minutes, up to 1 hour.
  • Heat a large skillet with a splash of oil. Add the marinated salmon and cook for 2-3 minutes on each side until crispy.
  • Pour the remaining marinade into the skillet and cook until the sauce thickens.
  • To assemble the bowls, start with a bed of cooked white rice at the bottom.
  • Place the cooked salmon on top of the rice.
  • Add sliced avocado, cucumber, and cooked edamame to the bowl.
  • Drizzle sriracha mayo over the ingredients.
  • Garnish with red pepper flakes and sesame seeds.

Notes

For an extra kick, add more sriracha to the mayo or sprinkle additional red pepper flakes. Customize your bowls with your favorite toppings like pickled ginger or seaweed strips.
