  • 1 lb Ground Beef
  • 2 tbsp Cooking oil
  • 1 count Onion, chopped
  • 1 tbsp Garlic, minced
  • 1 tbsp Ginger, grated
  • 2 tbsp Tomato paste
  • 2 tbsp Curry powder
  • 1 tsp Cayenne or sweet paprika
  • 1 tsp Garam masala
  • 0.5 cup Coconut milk or coconut cream
  • 1 cup Broth or stock (chicken or beef)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Lemon juice
  • 1 cup Cilantro or parsley, chopped

Instructions
 

  • In a sauté pan or cast-iron skillet, heat the cooking oil over medium heat. Add the chopped onion and sauté for about 2 minutes until it becomes translucent. Tip: Stir occasionally to avoid burning the onions.
  • Add the ground beef to the pan and cook on medium-high heat, stirring until the beef is no longer pink. Tip: Break up the beef as it cooks to ensure even browning.
  • Stir in the minced garlic and grated ginger, and sauté for an additional 2 minutes. Tip: Fresh garlic and ginger add a lovely depth of flavor.
  • Add the tomato paste, curry powder, cayenne (or sweet paprika), and garam masala. Sauté for 2-3 minutes on low heat until the mixture is fragrant. Tip: Keep stirring to prevent sticking.
  • Pour in the coconut milk and broth or stock. Season with salt and black pepper, then add the chopped cilantro (or parsley) and lemon juice. Bring the mixture to a boil. Tip: The lemon juice adds a nice brightness to the dish.
  • Once boiling, reduce the heat to medium-low and cover the pot with a lid. Let it simmer for 15 minutes. Tip: This step helps the flavors meld beautifully.
  • After simmering, taste the curry and adjust the seasoning if needed. If you prefer a thinner consistency for serving with rice, add a little water and bring it back to a boil. For a thicker consistency to serve with chapati, no need to add water.
  • Before serving, sprinkle with additional chopped cilantro for a fresh touch.

Notes

For a milder flavor, reduce the amount of cayenne or sweet paprika. This curry pairs wonderfully with rice or chapati, so choose your favorite side! No alcoholic drinks allowed, please substitute with a non-alcoholic option.
