  • 1 tablespoon vegetable oil
  • 2 medium chicken breasts, cut into bite-sized pieces
  • 1 medium red onion, diced
  • 3 medium bell peppers (red, yellow, green), diced
  • 1 medium tomato, diced
  • 2 cups long grain rice, rinsed
  • 6 tablespoons fajita seasoning
  • 2 cups vegetable stock
  • 4 tablespoons sour cream (optional)
  • 1 cup mozzarella cheese, grated (optional)

Instructions
 

  • Sauté chicken in vegetable oil until lightly browned, about 2-3 minutes.
  • Add diced onion and bell peppers, cooking until softened, about 3-4 minutes.
  • Turn off SAUTE, then add tomato, rice, seasoning, and stock. Stir to combine.
  • Secure lid and pressure cook on high for 8 minutes. Release steam quickly after cooking.
  • Fluff rice with a fork to separate grains.
  • Stir in sour cream and top with cheese, covering pot to melt cheese for 1 minute.
  • Serve with your favorite toppings and enjoy!

Notes

For a spicier kick, consider adding jalapeños or a dash of hot sauce. You can substitute the chicken with beef if you prefer.
