  • 2 lbs Boneless Skinless Chicken Thighs
  • 2 tbsp Olive Oil
  • 1 tbsp Brown Sugar
  • 2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Kosher Salt
  • 1 tsp Dry Mustard
  • 1 tsp Chili Powder optional
  • 1 /2 Black Pepper
  • 1 /2 BBQ Sauce of Your Choice

Instructions
 

  • Combine brown sugar, smoked paprika, garlic powder, cumin, kosher salt, dry mustard, chili powder (if using), and black pepper to create a seasoning blend.
  • Coat the chicken thighs with olive oil and sprinkle the seasoning blend over them, stirring until evenly coated.
  • Set the pressure cooker to sauté function on high, add chicken thighs, and cook for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes.
  • Pour BBQ sauce over the chicken, ensuring some sauce reaches the bottom of the pot, seal the cooker, and set to pressure cook on high for 5 minutes.
  • Release pressure quickly after cooking, transfer cooked chicken to a bowl, and shred using two forks, then mix back with BBQ sauce.
  • For crispy edges, use the broil function on the Instant Pot Duo Crisp for 8-12 minutes or broil on a baking sheet until crispy.

Notes

Feel free to adjust the spices to your taste. If you like it spicier, add more chili powder! Serve the shredded BBQ chicken on buns, over rice, or with your favorite sides.
