Ingredients

  • 1 pound ground beef (85-90% lean)
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) fire-roasted diced tomatoes, undrained
  • 1 tablespoon Better Than Bouillon beef stock
  • 1 tablespoon tomato paste (optional) for a thicker sauce
  • 0.5 head green cabbage, chopped

Instructions
 

  • In a large skillet over medium heat, cook the ground beef, breaking it apart with a meat chopper until browned. If there's excess fat, push the beef to one side of the pan and drain off some of the juices.
  • Add a little oil to the empty side of the pan. Sauté the chopped onion and minced garlic with a pinch of salt until softened and fragrant, about 3-5 minutes.
  • Stir in the can of fire-roasted diced tomatoes along with their juices.
  • Add the Better Than Bouillon, tomato paste (if using), cumin, smoked paprika, and additional salt and pepper. Mix everything well and bring the mixture to a simmer. Reduce the heat to medium-low and let it simmer for about 5 minutes.
  • Stir in the chopped cabbage and about ½-1 teaspoon of salt. Cook, stirring occasionally, until the cabbage is tender, about 15-20 minutes.

Notes

For added flavor, consider including other vegetables like bell peppers or carrots. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
