  • 1 lb ground beef Use ground Italian sausage for authentic flavor.
  • 4 cup potatoes Sliced 1/4 inch thick.
  • 1 whole onion Sliced slightly thicker than potatoes.
  • 2 cloves garlic Minced.
  • 0.5 tsp rosemary Dried or fresh.
  • 0.5 tsp oregano Dried or fresh.
  • 0.5 tsp thyme Dried or fresh.
  • to taste salt and pepper To season.
  • 0.5 cup shredded Parmesan Reggiano For topping.
  • as needed cooking oil For frying in skillet.
  • as desired eggs Optional, for topping.

Instructions
 

  • Slice the potatoes 1/4-inch thick and the onions slightly thicker. Soak potatoes in cold water for 10-15 minutes to remove starch.
  • Heat cooking oil in a cast-iron skillet over medium heat. Cook the ground beef and onions until browned. Transfer to a paper towel-lined plate.
  • Add more oil to the skillet. Once hot, add the sliced potatoes in a single layer. Season with salt and pepper. Increase heat to medium-high.
  • Let the potatoes brown for 2-3 minutes on one side before flipping. Brown the other side, then add minced garlic and cook for 1 minute until fragrant.
  • Remove potatoes and drain excess oil if needed. Add the sausage and onions back to the skillet with the potatoes.
  • Add dried or fresh herbs and heat until ingredients are hot.
  • Sprinkle Parmesan cheese on top and add a poached egg if desired.
