  • 1 lb ground beef
  • 0.5 teaspoon garlic powder
  • 1 large white onion, diced
  • 2 ribs celery, diced
  • 2 cans chicken broth (14.5 oz each)
  • 2 cans cream of celery soup (10.5 oz each)
  • 2 cups long-grain white rice
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with nonstick spray.
  • In a large skillet over medium-high heat, season the beef with salt, pepper, and garlic powder. Brown the meat until halfway cooked, about 5-7 minutes.
  • Add the diced onion and celery to the skillet. Continue cooking until the meat is fully cooked and the vegetables are tender, about another 5 minutes.
  • In a medium bowl, whisk together the cream of celery soup and chicken broth until smooth. Pour this mixture into the skillet, add the rice, and stir until well combined.
  • Transfer the mixture into the prepared baking dish and cover it tightly with aluminum foil. Bake for 1 hour and 20 minutes.
  • Remove the casserole from the oven and let it rest, covered, for 15 minutes. Fluff the rice with a fork before serving.

Notes

For added flavor, consider sprinkling some grated cheese on top before baking.
