  • 1 pound thick-cut beef bacon, diced
  • 1 large yellow onion, finely diced
  • 3 medium jalapeno peppers, seeded and diced
  • 2 teaspoons garlic, minced
  • 0.5 cup light brown sugar, packed
  • 0.33 cup apple cider vinegar
  • 0.25 cup maple syrup
  • 1 teaspoon chili powder

Instructions
 

  • In a medium skillet over medium heat, cook the diced beef bacon until crispy. As the bacon cooks, prepare a plate lined with a paper towel to absorb excess grease.
  • Once the bacon is crispy, transfer it to the lined plate to drain. Set aside.
  • Leave about ¼ cup of bacon grease in the skillet, carefully discarding the rest.
  • Add the finely diced onion and jalapeno peppers to the skillet. Reduce the heat to medium-low and cook until the onions caramelize, about 15-20 minutes, stirring frequently.
  • Stir in the minced garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, and the cooked bacon.
  • Let the mixture simmer for 7-10 minutes, or until it thickens to a jam-like consistency.
  • Serve the bacon jam warm or cold. If refrigerated, gently warm it before serving for the best flavor.

Notes

This bacon jam is perfect as a spread on sandwiches, burgers, or as a topping for crackers and cheese.
