  • 15 count wooden skewers soaked in water for 30 minutes
  • 2 pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 4 count yellow peaches quartered and halved
  • 3 count medium jalapeno peppers halved, seeded, cut into chunks

Instructions
 

  • In a large bowl, combine the chicken cubes, kosher salt, black pepper, chili powder, and olive oil. Toss well to coat the chicken evenly.
  • Assemble the skewers by threading the ingredients in this order: peach, chicken, jalapeno, chicken, jalapeno, chicken, and finish with a peach.
  • Preheat your air fryer to 375°F (190°C).
  • To prevent sticking, brush the assembled skewers lightly with olive oil. Place them in a single layer in the air fryer basket.
  • Air fry the skewers for 11-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • While the skewers are cooking, prepare the peach glaze. In a medium saucepan, combine the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix well and heat until warmed through.
  • Once the skewers are done, generously brush them with the peach glaze. Serve warm and enjoy!
