Ingredients
  

  • 3 onions
  • 2 cups cream cheese
  • 2 cups cheddar cheese grate
  • 1 cup cooked bacon chopped
  • 3 jalapeno peppers finely diced
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 tbsp black pepper
  • 2 cups flour
  • 4 eggs
  • 2 cups Panko crumbs

Instructions
 

  • Slice the onions into 1-inch slices and lay them out on a sheet tray lined with wax paper.
  • In a large bowl, mix cream cheese, cheddar cheese, bacon, jalapeno peppers, garlic powder, salt, and black pepper.
  • Fill each onion ring with the cheese mixture until it reaches the top of the ring.
  • Bread each onion ring by coating them first in flour, then dipping them in beaten eggs, and finally coating them with Panko crumbs.
  • Place the breaded onion rings in the freezer for at least 3 hours.
  • Fry the onion rings at 385°F until they are golden brown.

Notes

Notes: For a spicier kick, you can leave some jalapeno seeds in the mixture.
