  • 1 pound flank steak, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 2 teaspoons smoked paprika
  • 4 large (12-inch) flour tortillas
  • 1 cup cooked rice (white, brown, or cilantro-lime)
  • 1 cup black beans, drained and rinsed
  • 1 cup Mexican blend cheese, shredded
  • 1 2 cup pico de gallo or chopped tomatoes
  • 1 2 cup avocado, sliced or guacamole
  • 1 2 cup sour cream or Greek yogurt (optional)
  • 1 2 cup fresh cilantro, chopped (optional)
  • to taste hot sauce, optional

Instructions
 

  • In a bowl, combine olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper. Add the sliced steak and mix well to coat. Marinate in the fridge for at least 30 minutes, up to 2 hours. Tip: The longer you marinate, the more flavorful the steak will be.
  • Heat a skillet or grill pan over medium-high heat. Cook the marinated steak for 2-3 minutes per side until seared and cooked to your liking. Let it rest for 5 minutes, then thinly slice it across the grain if needed. Tip: Resting the meat helps keep it juicy!
  • Warm each tortilla briefly in a dry skillet or microwave until soft and pliable. Tip: This makes it easier to roll the burritos without tearing the tortillas.
  • On each tortilla, layer rice, black beans, cooked steak, shredded cheese, pico de gallo, guacamole, sour cream, and cilantro. Tip: Don’t overfill the tortillas to prevent spilling!
  • Fold in the sides and roll tightly to form a burrito. For a crispy finish, place the burrito seam-side down on a hot skillet for 1-2 minutes. Tip: This adds a nice crunch and helps seal the burrito.
  • Serve with hot sauce if desired. Tip: A splash of hot sauce can elevate the flavors even more!

Notes

For a vegetarian option, swap the steak with grilled veggies or tofu. To make it spicy, add jalapeños or a dash of cayenne pepper to the steak marinade.
