  • 8 ounces cream cheese, softened
  • 1 cup sugar-free BBQ sauce
  • 2 tablespoons ranch dressing seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon fresh ground black pepper
  • 2 pounds cooked boneless skinless chicken breast or thighs, cubed or shredded
  • 8 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey Jack cheese
  • Green onions, for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened cream cheese, sugar-free BBQ sauce, ranch dressing seasoning, salt, and black pepper. Mix well until smooth. Tip: Ensure the cream cheese is at room temperature for easy mixing.
  • Gently fold in the cubed or shredded chicken, chopped bacon, and ½ cup each of cheddar and Monterey Jack cheeses until everything is well combined.
  • Spread the mixture evenly in a casserole dish. Top with the remaining cheese.
  • Cover the dish with foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and continue baking for an additional 6-8 minutes, or until the cheese is melted and bubbling. Tip: Keep an eye on the cheese to avoid burning.
  • Once done, garnish with a drizzle of BBQ sauce and sprinkle with chopped green onions before serving. Tip: This adds a fresh crunch to your dish.

Notes

For a spicier kick, consider adding some diced jalapeños to the mixture. This casserole pairs wonderfully with a side salad for a complete meal.
