Instructions
Preheat your oven to 400°F (200°C).
Shred the cooked chicken using a knife or your hands.
In a baking dish, combine the shredded chicken, cherry tomatoes, and mozzarella cheese.
In a separate bowl, mix together the pesto, sour cream, mayonnaise, and half of the parmesan cheese. Season with salt and pepper to taste.
Pour the pesto mixture over the chicken, tomatoes, and mozzarella in the baking dish. Sprinkle the remaining parmesan cheese on top.
Bake in the preheated oven for 20 minutes, or until the top is golden brown and bubbly.
While the casserole is baking, toss the leafy greens with apple cider vinegar in a bowl. Drizzle olive oil over the greens.
Once the casserole is done, serve it alongside the dressed leafy greens for a complete meal.
Notes
Feel free to add your favorite herbs or spices to the casserole for extra flavor.
