  • 20 ounces cooked chicken shredded
  • 7 ounces cherry tomatoes sliced
  • 8 ounces mozzarella cheese cut into small pieces
  • 2 tablespoons pesto
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 ounces parmesan cheese divided
  • Salt and pepper to taste
  • 7 ounces leafy greens
  • 1 tablespoon apple cider vinegar
  • 4 tablespoons olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Shred the cooked chicken using a knife or your hands.
  • In a baking dish, combine the shredded chicken, cherry tomatoes, and mozzarella cheese.
  • In a separate bowl, mix together the pesto, sour cream, mayonnaise, and half of the parmesan cheese. Season with salt and pepper to taste.
  • Pour the pesto mixture over the chicken, tomatoes, and mozzarella in the baking dish. Sprinkle the remaining parmesan cheese on top.
  • Bake in the preheated oven for 20 minutes, or until the top is golden brown and bubbly.
  • While the casserole is baking, toss the leafy greens with apple cider vinegar in a bowl. Drizzle olive oil over the greens.
  • Once the casserole is done, serve it alongside the dressed leafy greens for a complete meal.

Notes

Feel free to add your favorite herbs or spices to the casserole for extra flavor.
